It’s been pretty cold lately so I had been looking forward to cooking something hearty, warming and healthy. I’ve been keeping my eye out for recipes that don’t involve a lot of prep the night before, and even less the next morning and this minestrone soup is the perfect answer!
I used this recipe from Family Fresh Meals but started tweaking it a little when it became apparent there was no way that all these ingredients were going to fit in my slow cooker.
I skipped the pasta as I thought it would be filling enough with potatoes and beans. Unfortunately I forgot to take a photo – but you’ll have to trust me, it was yummy!
